Cook the pasta according to the instructions on the packet.
Peel and finely chop onions and garlic. Wash the spinach.
Heat the oil in a pan and fry the onions and garlic until translucent. Add a handful of spinach and steam until it collapses. Deglaze with white wine. Add the cream and stock and simmer for about 5-10 minutes.
Finely puree the sauce with a hand blender and mix in the remaining spinach. Season to taste with nutmeg, salt and pepper.
Mix the pasta with the sauce and serve.
